  • 6 TL Instant-Espressopulver
  • 60 ml hot water
  • 125 g Mascarpone
  • 500g low-fat quark
  • 60 g sugar
  • 240 g whipped cream
  • 1 Pack. Sahnesteif
Method · 20 min
  1. Dissolve espresso powder in a wide cup with hot water and let it cool.
  2. Stir mascarpone, quark, half the espresso and 50g of sugar until smooth using the whisk attachment of a mixer.
  3. Whip the cream until stiff, gradually adding 2 tablespoons of sugar. Fold in the cream stabilizer and set aside about 40g of the whipped cream for the fluffy topping of the espresso cream.
  4. Carefully fold the remaining whipped cream into the espresso-mascarpone-quark cream.
  5. Divide the espresso cream among four glasses and garnish each dessert with a small dollop of whipped cream before serving.
