125 g wheat flour
50 g whole wheat flour
1 tablespoon fresh thyme
1 pinch of freshly ground pepper
1 pinch of flaked salt
125g butter
125 g parmesan
1 egg, beaten
Put the flour, thyme, salt and freshly ground pepper in a bowl and mix well. Crumble in the butter and mix until the consistency is like finely grated Parmesan cheese. Sprinkle freshly grated Parmesan cheese into the mixture and mix well. Add the egg and mix well.
Shape the dough into an oblong rod 4-5 cm in circumference and wrap it in cling film. Place in the fridge for at least 1 hour.
Cut the biscuits into 5 mm thick slices and place on a baking sheet lined with baking paper. Bake in a preheated oven at 180 degrees Celsius for about 12-14 minutes, until the biscuits are golden.
Let them cool on a wire rack for about half an hour. They will be crispiest after 30-45 minutes, when they have just set. Then serve.
