3 onions, halved and sliced
2 eggs
1 dl crème fraîche 18%
½ teaspoon dried thyme
50 g Gruyere, freshly grated
salt and freshly ground pepper
10g butter
2 tablespoons olive oil
250 g puff pastry
Heat a pan with oil and butter, wait for the butter to sizzle and then sauté the onions for 10-15 minutes until they are soft and starting to turn golden and caramelized. Let cool to room temperature.
Whisk eggs (save a little beaten egg for brushing), crème fraiche, thyme, salt and pepper together in a bowl and fold in the caramelized onions and Gruyere cheese.
Cut out circles from the puff pastry in a size that is suitable for making a small pie in a greased mini muffin tin. Place the dough circles in a greased tin and fold them neatly at the edges. Fill the small pie dough with the onion filling.
Brush with beaten egg and bake in a preheated oven for about 10-12 minutes at 225 degrees hot air and let the small puff pastry tarts cool on a rack for a few minutes before serving.
