Beef Curry Udon

This rich and saucy beef curry udon is the ultimate Japanese comfort food, perfect for when you’re craving something deeply satisfying and warming. Featuring tender beef, savoury curry sauce, and chewy udon noodles, this dish is surprisingly quick to pull together for a cozy weeknight dinner.

Ingredients · Servings 2
  • 3 cups dashi
  • 2 Japanese curry blocks
  • ½ onion, sliced
  • ½ carrot, chopped
  • 150 g beef, thinly sliced
  • 1 tablespoon soy sauce
  • ½ tablespoon tomato paste
  • 2 servings frozen udon noodles
  • 1 green onion, white and green parts, chopped, for garnish
Method · 25 min
  1. Heat a medium pot over high heat. Add the onion and carrot and cook, stirring occasionally, until softened, about 3–4 minutes.
  2. Add the tomato paste and beef to the pot. Cook, stirring, until the beef is lightly browned, about 2–3 minutes.
  3. Pour in the dashi and add the curry blocks. Stir, using a sieve to help dissolve the curry blocks completely, then stir in the soy sauce.
  4. Bring the mixture to a boil, then reduce the heat to a simmer. Cook until the sauce has thickened, about 10 minutes.
  5. While the curry simmers, cook the frozen udon according to package instructions, about 3 minutes. Drain and divide between serving bowls.
  6. Ladle the curry over the udon and top with the green onion. Store any leftovers in an airtight container in the refrigerator for up to 3 days.
  7. Enjoy!
