Crispy puff pastry with marzipan filling

If unexpected guests arrive or you simply crave something sweet in the afternoon, these marzipan sticks with puff pastry are an excellent choice. The combination of buttery dough and a moist filling looks truly impressive on the plate. And you save yourself the hassle of lengthy kneading or complicated preparations.

  • 600 g Marzipanrohmasse
  • 2 egg whites
  • 7 tablespoons of milk
  • 1 tbsp icing sugar
  • 100g chopped almonds
  • 2 packages of puff pastry
  • 1 egg yolk
Method · 35 min
  1. First, prepare the filling for the puff pastry sticks. To do this, mix the marzipan paste with the egg whites and 6 tablespoons of milk, stirring until smooth.
  2. Add icing sugar and 50g chopped almonds and mix everything again. It's best to do this first with a hand mixer and then with a spatula.
  3. Preheat the oven to 180 °C (top/bottom heat).
  4. Unroll a sheet of puff pastry and spread the prepared almond-marzipan mixture evenly over it. Leave about 1 cm free on both long sides to prevent the filling from leaking out.
  5. Then place the second sheet of puff pastry on top.
  6. Mix the egg yolk with 1 tablespoon of milk and distribute the remaining 50 chopped almonds over the dough.
  7. Then you can cut the marzipan sticks into 20 small sticks using a pizza cutter or sharp knife, and twist them if you like.
  8. Bake the marzipan sticks for 20 minutes, until golden brown. Let them cool and enjoy.

Really good: Marzipan sticks with puff pastry

The base for this pastry is a creamy marzipan mixture. To make the marzipan easier to work with, you can coarsely grate it or tear it into small pieces beforehand. When mixed with eggs and a splash of milk, it creates a spreadable filling. Chopped almonds add a light crunch to the soft mixture. For the pastry, use ready-made puff pastry from the refrigerated section.

Before the pastry goes into the oven, sprinkle more chopped almonds over the top layer of dough. Gently press the nuts in so they adhere well. A sharp knife or a pizza cutter works particularly well for cutting. You can cut the filled dough into narrow strips and twist them to create visually appealing spirals. Alternatively, you can cut small rectangles or form loose bows. Place the pastries on a baking sheet lined with parchment paper, leaving some space between them, as the dough will rise during baking.

As soon as you take the baking sheet out of the oven, the whole kitchen will smell wonderfully of roasted almonds and butter. Let the marzipan sticks cool completely on a wire rack. The puff pastry only becomes truly firm and crispy once it has cooled. Afterward, you can decorate the sticks to your personal taste. A delicate pattern of melted dark chocolate creates a beautiful color and flavor contrast to the light marzipan filling. A classic icing or a dusting of powdered sugar also goes perfectly with them.
