Garlic and onion peels can also be used for broth and powder.

Garlic and onion peels can be used to make broth or seasoning powder, instead of throwing them away.

Cooking with garlic and onions generates a lot of peels that usually end up in the trash. According to Food & Wine, simply store them in a freezer bag each time you cook with these ingredients. When the bag is full, you'll have enough peels for a stock.

According to Garlic and Zest, the peels are placed in a large pot, covered with cold water, and simmered for at least two and a half hours; then strained. Other vegetable scraps or herbs can be added, although according to Food & Wine, the peels alone work just as well.

If not cooked with broth, the peels can also be dried and pulverized. According to Green Goddess, this yields onion powder, and Mindbodygreen suggests doing the same with garlic peels to obtain garlic powder. This way, you avoid buying powder at the store.

Fresh garlic and onions offer more flavor than dried, but in many recipes, powder is ideal, such as in dry marinades or mild sauces. According to MyRecipes, powder burns less easily, which is better for long cooking times and direct heat.
