How many ribs are in a rack of pork, beef, or lamb?

A whole rack of pork ribs has between 10 and 13 ribs, and the number to serve depends on the type of cut and the number of diners.

As a general rule, a whole pork rib rack has between 10 and 13 ribs, a beef rib rack has between 9 and 12, depending on how the butcher cuts it, and a lamb rib rack has 7 or 8 ribs. These quantities vary depending on the specific rack purchased.

Baby back ribs come from the loin of the pig and have less meat. A serving usually contains between 10 and 13 ribs, enough for one or two people. Pork ribs, also called "flanken" in some countries, come from the belly, just below the bacon. They have more meat and an extra vertebra in each rib, so a full rack has between seven and eleven individual ribs, and most commonly includes between seven and nine.

A half portion is usually served as an appetizer or alongside sandwiches, burgers, or salads, and contains six to eight individual ribs, about an inch thick. It's generally easier to work with than a whole rack of ribs because it provides a good amount of meat without being too large.

An emergency rack of ribs typically has four or five ribs, usually because a full rack has been damaged. Although smaller, the meat is sold by the pound, so it retains the same value and similar characteristics to a full rack.
