Bianco Storico: pizza napolitana y pasta fresca en el desierto de Mexicali
Juliana Strappa and Eduardo Santacruz opened Bianco Storico in Mexicali, where 80% of the ingredients come from Italy.
Juliana and Eduardo aren't chefs, but entrepreneurs and artists. Juliana, originally from Argentina, is the co-founder of the agency Strappa Rovetto and has worked in marketing for artists such as Romeo Santos, Sin Bandera, Carlos Rivera, Ericka Ender, and Melendi.
Eduardo, originally from Mexicali, trained as an actor in Los Angeles, Madrid, and London, and has appeared in television series such as El Señor de los Cielos. He is the creator of the menu, which focuses on Neapolitan pizzas, fresh pasta, and artisanal breads made entirely on-site.
La carta de vinos va desde el Montepulciano d'Abruzzo hasta un Amarone della Valpolicella DOCG del Véneto, de la Famiglia Pasqua.
Eduardo learned from his mentor, five-time world champion Jesús Marquinetti, captain of the Spanish pizza team. He also received recognition from Alfredo Folliero, president of the Unione Pizzaiuoli Tradizionali e Ristoratori (Union of Traditional Pizza Makers and Restaurateurs), for his career as a top-level pizza chef.
The restaurant is certified by the Associazione Verace Pizza Napoletana, certified by the Ospitalità Italiana and recognized by the «Eccellenze Italiane».
Juliana contributes creative direction, partnerships, marketing, and experience design. Eduardo summarizes it this way: “Bianco Storico is a tribute to Italian tradition, where every ingredient and technique pays homage to our roots. But it’s also a replicable model; a concept that demonstrates that, with due respect for the product and the essence of the cuisine, we can take this experience to new horizons without losing its authenticity.”
Both reside in Miami, where they are preparing the accelerated expansion of the concept, both in Mexico and in the United States.
