FU.BA, the new Madrid bakery that mixes the archaic with the futuristic

Bakeries are moving beyond breakfast pastries, and FU.BA, in Madrid, is taking them further with an interior that blends the archaic and the futuristic.

In recent years, bakeries have evolved remarkably: they've gone from selling breakfast pastries to thoughtfully designed meeting places, community gathering spots, and independent gastronomic destinations. The new Madrid bakery FU.BA takes this trend even further. Its interior, designed by Isern Serra, evokes the archaic atmosphere of ancient bakeries dug into the earth and the sculptural world of a futuristic installation.

The name FU.BA is short for Future Bakery, and the concept aims to integrate traditional baking into a contemporary, almost futuristic, environment without losing the warmth and human character of the space. Inside, natural textures, organic shapes, and industrial elements are constantly interwoven.

One of the most striking elements is the almost monochromatic palette: the hand-molded, sand-colored walls contrast with the cool steel surfaces. The space evokes both a minimalist gallery and a futuristic laboratory, while still remaining a fully operational bakery where bread and pastries take center stage.

Madrid has established itself as a hub for designer gastropubs, but FU.BA stands out even within that scene. Instead of ostentatious luxury, it focuses on atmosphere and visual appeal, and the entire space invites customers to relax and linger over breakfast. It offers the kind of experience that transforms a bakery into a destination as appealing as a fine-dining restaurant or a boutique hotel.
