Flavors of Seoul at 10,000 feet

Minae Seo, raised in Gimcheon, brings Korean cuisine to the business class of the Mexico City-Seoul route.

Chef Minae Seo grew up in Gimcheon, South Korea, surrounded by the aromas of traditional cooking and the dishes her mother prepared. Her culinary identity solidified in Mexico City with Kasina Café, a space that fuses ancestral techniques with contemporary sensibilities.

Now his cuisine reaches altitudes exceeding 3,000 meters. Seo designed the menu for Premier One, the business class on the Mexico City-Seoul route, in collaboration with Aeromexico.

The main dishes rotate quarterly. The menu includes bibimbap, the classic mixed rice with fresh vegetables, egg, and bajirak muchim (clam stew), which adds a subtle seafood touch.

There's also Korean barbecue, with traditionally marinated beef, Korean rice, bok choy (cabbage), carrot, egg, chili, and black sesame seeds. Bulgogi with rice includes strips of marinated beef, gochugaru (Korean red chili), and white sesame seeds.

For dessert, a black sesame cheesecake, accompanied by fresh raspberries, dark chocolate and mint leaves.

Each dish is designed to offer a taste of the Korean culinary universe aboard the airline's Boeing 787-8 Dreamliner, before landing.
