Gin Chan brings a Japanese street izakaya to Roma Norte with Silverio Cervantes

In Roma Norte, Gin Chan brings together a street-inspired izakaya from Japan with fresh market produce, sake and signature cocktails.

In a corner of Roma Norte, a neighborhood that's becoming a gastronomic district, lies Gin Chan. Authentic and unpretentious, it reflects its creator's experiences and serves fresh market produce, cocktails, and sake.

Chef Silverio Cervantes turned his travels and experiences in the alleyways of Tokyo into his own business, a unique Japanese gastronomic experience in Mexico City.

Although many mistake it for a sushi bar, Gin Chan is first and foremost an izakaya. The menu features sushi, seafood, and specialties such as fried fish neck and bacon yakimeshi.

As night falls, Cervantes also offers an omakase, a ritual in which the diner places themselves in the chef's hands. The menu then fills with dishes such as mussels in their own juices with ikura and pickled gherkins, or clams with chocolate served with toro, sea urchin, ikura, caviar, and quail egg yolk.

Each dish bears the chef's signature: carefully selected local ingredients, personal recipes, and absolute respect for artisanal fishing. On Thursdays from 7:00 PM, they serve ramen nights, a unique tribute to the traditional stew.

For drinks, the menu offers national beer (Salvajita de baril) or Japanese beer (Asahi or Sapporo), and signature cocktails such as the Tomato sour, the Sake tonic, the Pink grapefruit mojito or the Shisho sake mojito.
