Tablafina opens in Cordoba with Andalusian tradition in its menu

Tablafina opens in Cordoba with Andalusian tradition in its menu

In the heart of the Jewish Quarter, Tablafina opens a contemporary tavern with three historic courtyards in the new NH Collection Palacio de Córdoba.

The hotel is located in the heart of the Jewish Quarter and has been completely restored. It has been transformed into a five-star establishment where heritage and contemporary design coexist in perfect harmony. It stands atop a collection of stately homes, on the remains of the ancient city wall, and on the vestiges of a Roman domus.

The space unfolds across three Cordoban courtyards: the Patio de Petra, the Patio Mudéjar, and the Patio del Compás, shaping the experience from the entrance in the Plaza de Maimónides to the tables. Brick arches, vegetation, natural light, and centuries-old walls frame a gastronomic offering that speaks the same language as the architecture: that of reinterpreted memory.

Inspired by the world of Spanish taverns and bars, Tablafina's concept is based on familiar ingredients and the pleasure of well-prepared products. The menu includes Iberian cured meats, select preserves, and a carefully curated selection of Spanish cheeses. But it is in the "Cordoban Essence" section where the restaurant truly reaffirms its regional roots.

Iconic dishes like salmorejo, boneless oxtail, and special flamenquín are presented with precise execution and a contemporary aesthetic. They respect traditional flavors and techniques while refining textures and presentation. To this foundation are added the chef's suggestions, featuring seasonal products and a modern interpretation of Andalusian cuisine.

With seating for around 90 diners, Tablafina Córdoba is designed as a versatile space, offering everything from casual tapas to more relaxed meals. The carefully curated wine list complements both local classics and more creative dishes.

The opening consolidates Tablafina's expansion as a culinary brand within Minor Hotels. The concept is already present at NH Nacional (Madrid), NH Málaga, NH Sevilla Plaza de Armas, and NH Collection Barcelona Gran Hotel Calderón, where it is adapted to each location. In Córdoba, this adaptation involves a clear immersion in Andalusian tradition and the flavors that define the city.

Tablafina is part of a strategy that places gastronomy at the heart of the hotel experience. In a city where culinary tradition is a living heritage, the restaurant presents itself as a contemporary tavern where seasonal products and local recipes find a new expression.
