Aatma Curry House, Indian fusion cuisine inside a Brighton brewery
Chef Keith Sarasin opens an Indian fusion restaurant in a Brighton brewery with a glossary on the menu.
Sarasin, founder and chef of the pop-up restaurant Farmer's Dinner and a native of New Hampshire, has dedicated decades to Indian cuisine. His restaurant, Aatma Curry House, is located inside the Widowmaker Brewing Co. in Brighton. It offers high-quality Indian dishes with fusion flavors and a glossary of Indian terms on the menu to explain the country's gastronomy to diners.
Indira's dal ($13) is the recipe that sparked Sarasin's passion for Indian food, and it's named after one of her early mentors. It's a slow-cooked lentil stew with onions, green chilies, and ajwain, an oregano-like herb, flavorful but not overly spicy.
For something more street-style, the fried idli chaat ($15) involves deep-frying idlis, steamed rice cakes, coating them in hand-ground dried chilies, and topping them with tamarind and ginger chutney. It's served on creamy yogurt with fresh cilantro.
The Aatma burger ($19) is an American smash burger seasoned with masala spices and house sauce, accompanied by pickled onions (achari) and amul cheese, an Indian cheese with a flavor similar to sliced American cheese. Sarasin spent three months developing it, and it has quickly become a customer favorite.
To drink, the homemade masala chai ($6) features thick oat milk and toasted spices. The mango lassi ($9), with rose syrup, is creamy, tangy, and floral.
