Martín Fernández wins Burger Combat with a burger from Ourense

Martín Fernández, from Gastrobar Bágoa, in Ourense, won the fourth edition of the competition with A Fuxidía, a hamburger that pays homage to his grandmother with beef cheek.

The A Fuxidía burger features a traditional beef cheek stew "just as she used to make it," in homage to the winner's grandmother. According to the award description, it's a burger that "breathes Galicia in every bite." It also includes minced Galician blond ribeye steak, homemade smoked guanciale, San Simón cheese, homemade XO sauce, oyster sauce, pickles, and chipotle, all served on a brioche bun.

As the winner explained, A Fuxidía means "ephemeral", because at Bágoa Gastrobar they prepare La Efímera every day with the ingredients they have on hand, always prioritizing Galician products.

Chef Sergio Fernández, a member of the jury, highlighted that, despite the number of ingredients, "at no point did one ingredient stand out above the others; it is a very balanced dish with a lot of flavor."

The competition, organized by the Swedish bakery Lantmännen Unibake, awarded second place to Ángel Solsona of Hamburguesería La Demo (Torrejón de Ardoz) with his burger, La Atrevida: cured beef, Gruyère cheese, Iberian bacon jam, marinated Iberian pork belly, and Millionaire sauce. Third place went to Aldo Sebastianelli of MENA (Pozuelo de Alarcón, Madrid) with his Blue Mena Burger: beef, red onion, hanging tomato, romaine lettuce, Cabrales cheese, quince paste, homemade sauce, and butter.
