These little treasures enhance every breakfast
A good breakfast looks different for everyone. Sometimes mornings are rushed, and the first bite is eaten on the way to work. On days off, however, we like to take more time to start the day. Cottage cheese pancake bites are an excellent choice for those leisurely weekend moments.
- 200g cottage cheese
- 3 eggs (size M)
- 1 TL Vanilleextrakt 🛒
- 2 tablespoons of sugar
- 80 g wheat flour
- 1 tsp baking powder
- 1 tsp cornstarch
- 1 pinch of salt
- 100g berries (of your choice, e.g., mixed from the frozen food aisle)
- a little oil for frying
- Place the cottage cheese, eggs, and vanilla extract in a tall container. Blend everything until smooth.
- Add the sugar and mix everything thoroughly.
- Add flour, baking powder, cornstarch, and a pinch of salt. Mix everything together to form a thick batter.
- Wash the berries and pat them dry, or take them out of the freezer and let them thaw.
- Heat the oil in a small pan and heat it over medium heat.
- Drop small portions of batter into the pan using a tablespoon. Place a few berries directly on top of the spoonfuls.
- Cook the pancake bites for about 2-3 minutes until small bubbles form. Turn them over and cook for another 1-2 minutes on the other side until golden brown. Repeat until all the batter is used.
Cottage cheese pancake bites: a treat for those with a sweet tooth
The cottage cheese in the batter serves several purposes. It makes the mixture particularly moist and gives the finished pancakes a soft texture. At the same time, this ingredient provides a good portion of protein. This is especially practical in the morning, as a protein-rich breakfast keeps you feeling full longer and gives you energy for the hours ahead. The cheese's slight acidity harmonizes beautifully with the typical sweetness of a classic pancake batter. If you blend the mixture in a food processor before cooking, the small granules disappear completely, resulting in a particularly smooth pancake. For those who prefer a bit more texture, simply stir the cheese in with a whisk.
These little pastries strike a perfect balance between a substantial breakfast and a sweet dessert. A touch of vanilla extract or vanilla bean seeds in the dough enhances their delicate character and adds a warm note. Fruit provides an excellent counterpoint to the sweetness. Berries, in particular, with their slight tartness, complement the mild cheese flavor beautifully. You can either add them directly to the dough or sprinkle them over the finished pastries as a topping. Outside of the summer season, simply use frozen raspberries or blueberries. It's best to simmer them briefly in a small saucepan until a fruity sauce forms.
The convenient size makes preparation particularly flexible. Instead of flipping large flatbreads in a pan, you simply bake many small portions. This is often faster, and the finished pieces are easy to stack or store in a container. If you prepare a larger quantity on Sunday, you'll have a ready-made breakfast for the first few workdays of the week. Simply store the cooled leftovers in an airtight container in the refrigerator. The next morning, you can briefly reheat them in the microwave or toaster, and they'll taste just like they're freshly made.
If you like to start your day with something sweet, you'll love this version. These little pancakes can be customized to your liking and adapted to your personal taste. A generous drizzle of maple syrup or a little runny honey rounds out the dish and gives it a beautiful sheen. Roasted nuts or slivered almonds add a nice crunch. On warm summer days or as an afternoon dessert, you can even serve these warm pancakes with a scoop of vanilla ice cream. The combination of the warm batter and the melting ice cream transforms a simple breakfast into something truly special.
